for the most part…

today was a rare occasion…i had the day off. i planned to make the best of it, and i did for the most part…

we did laundry last night, which saved me a lot of time.

i meant to cut the grass, but it rained (which is an excuse i’ll take!) and then i was just so involved in the craft room, the day just got away from me.

i was also able to try out two new paleo recipes, which were both a success!

for breakfast we just had 2 hard boiled eggs, and a fruit medley of strawberries, asian pears, and kiwi.

we also had coffee, flavored with raw honey, coconut milk, cinnamon, and vanilla (all allowed, don’t worry!)

for lunch, we had leftover romaine lettuce with balsamic vinaigrette, and our fruit/nut mix.

for dinner we had baked teriyaki chicken, and broccoli.

by this point, i was beyond full. brian was still hungry, so he had a banana, and as i write he is on his phone searching for paleo snacks he can eat, lol

i also baked our breakfast, mini sweet potato souffles, which i let brian sample early. he doesn’t like sweet potatoes, but it’s one of the closest things to a real starch we are allowed to eat (in moderation) that’s still considered paleo approved. so, when he asked what they were, and said they tasted like pumpkin, i just let him think that šŸ˜‰

we will both be busy tomorrow after work…i am going to paint pottery with some girlfriends and go to dinner, and he is going to work a little late and watch the pacer game with his friend. therefore, i will give you our meal plan now šŸ™‚ lol

breakfast:Ā  2 mini sweet potato souffles, 1 banana sliced, topped with raw honey and cinnamon

lunch:Ā  leftover chicken, salad, 1/2 of 1 green apple (brian did some paleo research on his own, and read that too much fruit can also be bad, because of the natural sugars they contain. this is true, so to ease his mind i will start limiting our fruit intake :P)

dinner:Ā  the pottery place my friends and i are going to is in broadripple, so i had to chose a restaurant carefully that could cater to my paleo needs. we are going to go to three sister’s cafe. i have never been before, but the menu has a great selection of salads, and i think i should be fine. (i’m scared to think of what brian will eat, but i have listed all of the appropriate options in the fridge and it’s up to him to decide.)

i was also able to repaint my toes today which was a surprisingly high priority on my to do list, lol. it always makes me feel like a new person. plus, it’s getting hot…so if you are going to have your toes exposed, you should do the world a favor and make sure the dogs aren’t barking šŸ™‚

and finally, as i mentioned before, i wasted several hours in the craft room, working on a project with no success…but was able to complete my first tutorial for my other blog if you want to check it out here.

off to “watch” the hobbit with brian, and make him a snack because he won’t quit whining about it.

  1. You definitely made a good choice with the sweet potato souffles, those things are my favorite! So glad you liked it all šŸ™‚ I’m in the process of trying to make some sweet potato gnocchi, and I’m crossing my fingers it’s not a big fail. Keep up the good work!

      • Making it easy is the whole point, I’m glad it’s working šŸ™‚ That sorbet is great! I think I want to sub cherries for the strawberries at some point…
