quick update…

ok friends…this is going to be short, sweet, and to the point, because i have been working my behind off on my other blog and i am tired!

i have to share two recipes that were wonderful, and then i’m out.

first, sweet potato hash with fried eggs

ohhhh mmmm gggg it was delish! brian doesn’t really like sweet potatoes (i’ve probably said that already in a previous post) but i have a hard enough time finding paleo recipes as it is, let alone ones that we both love. hey, some days you’re the pigeon, some days you’re the statue. anyway. i put some ham on his and some turkey on mine. would’ve been great with bacon but we made do. i will for sure eat this again.

then for dessert, i tried paleo chocolate mousse

i didn’t do the whole banana bit. i had the stuff for it, just didn’t wanna mess with it for some reason. i also trusted brian to read the recipe to me as i made it, and i’m pretty sure he didn’t tell me to blend just the coconut milk by itself first, before adding all of the other ingredients. which i should have known anyway, because i had to leave it in the fridge overnight so it would separate, and there’s really no other reason why you would need to do that. ugh. i think that messed up the consistency, because you were only supposed to leave it in the fridge to set for 3 1/2 hours, but when i woke up this morning, it was still soupy 😦 i put one in the freezer and it was pretty good, but melted quickly. unsure if i will attempt it again.

i had a horrible day, so brian treated me to dinner at our favorite vietnamese restaurant. i had pho, which is a soup that’s mostly broth, your choice of meat (i had seafood) and fresh veggies like bean sprouts, jalapeno, etc. it does come with either rice or egg noodles, but i avoided those. i also skipped my usual egg rolls and coke 😦

i think the initial weight loss has probably plateaued now, and it’s time to start adding more physical activities. it has been super hot the last few days, and i am off this weekend, so i for sure see swimming in my near future.

still feeling great every day. not even missing soda or any of my other usual favorites. not saying i wouldn’t be eating or drinking them if i could, but i am now consistently and deliberately choosing what i put into my body.

today for lunch at work i had a salad with asparagus, avocado, toasted almonds, tomatoes, grilled chicken and strawberry mango vinaigrette. it also came with goat cheese, but obviously i omitted that.

i think that’s all i can handle for now before i crash.
